[recipe] Dried fruits cookies

Hi, everyone!

It’s been a while since I uploaded the last blog but now I am back!

And today, I want to share with you a recipe of dried fruits cookies.





I’ve worked at a hostel for 4 month and I met a girl from France who was only two years older than me. Since I am studying French and love talking, I tried to communicate with her in French as much as possible and she was so friendly and kind that I really had a great time.

One day, I baked cookies and brought them to my workplace because I knew that she love eating. I wasn’t sure if a friend from France, where there are lots of high-quality pastry shops would like them or not but she gave me compliments and asked me to give the recipe. 

It is not difficult, simple ingredients and simple structures but I wanted to put the recipe and photos together so I decided to share it on my blog. 

Some of you may think cookies should be buttery and sweet, and I really understand that because that’s obviously tasty:) But I also love baking something simple, not using butter, and something that you can feel the smell of flour. If you like dried fruits and want to make a little bit light and simple cookies, this recipe is for you.



<cookie dough>

  • 20g almond powder
  • 60g flour 
  • 20g whole wheat flour 
  • 30g sugar (I like using cane sugar)  
  • a pinch of salt 
  • 2 tablespoon of oil (white sesame oil, rape-seed oil, any kinds of oil that doesn’t have strong smell) 
  • 2 tablespoon of water


  • 15g dried cranberries (You can use raisins or any other kinds of dried fruits)
  • 40g dried prunes, chopped
  • 1/2 teaspoon of cinnamon powder
  • 1 tablespoon of maple syrup

Put everything in a bowl and mix together.


  1. In a bowl, put every dry ingredients; almond flour, flour, whole wheat flour, sugar and salt then mix together. (I recommend to use a whisk to mix it.)
  2. Add oil into the bowl then mix them using spatula until it becomes like crumbles.
  3. Add water and mix again. Put the dough into the fridge and chill it for about 30 minutes.
  4. Roll the cookie dough out into rectangle and spread the mixed filling.
  5. Cut the dough then place them onto baking sheet.
  6. Preheat the oven to 170℃ and bake for 30 minutes.

Measure all ingredients before you start.

Mix all dry ingredients.

After adding the oil.

This is after chilled in the fridge.

Roll the dough into rectangle.

Spread the filling.

Cut the cookie dough.

It’s freshly baked!

  • アーモンドパウダー 20g
  • 薄力粉 60g
  • 全粒粉 20g
  • 砂糖(きび砂糖や甜菜糖など) 30g
  • 塩 ひとつまみ
  • 油(太白ごま油・菜種油など) 大さじ2
  • 水 大さじ2


  • ドライクランベリー(レーズンなど好きなドライフルーツ) 20g
  • ドライプルーン 40g (刻む)
  • シナモンパウダー 小さじ1/2
  • メープルシロップ 大さじ1



  1. ボウルにアーモンドパウダー、薄力粉、全粒粉、砂糖、塩を入れて混ぜる。(手でも、ゴムベラでも、木べらでも。私は楽なのでいつも泡だて器を使います。)
  2. 油分を加える。ゴムベラを使って、切るように混ぜる。クランブルのようになったら良い感じ。
  3. お水を加える。ゴムベラでひとまとまりになるまで混ぜる。30分冷蔵庫で休ませる。
  4. 生地を広げて10x20㎝くらいの大きさにのばす。(適当で大丈夫です。)混ぜたフィリングを生地の半分に広げ、生地でサンドする。
  5. 好きな大きさにカットしてオーブンシートを広げた天板に並べる。(写真を参考にしてください。)
  6. 170℃に余熱したオーブンで30分焼く。
